Kids love pasta and this easy salad lets you make it without having to do too much cooking. Cooking the broccoli with the pasta saves time and a pot to clean up.

Ingredients:

1/2 lb (250 g) rotini noodles
1 lb (500 g) broccoli
2 tomatoes, chopped
1 red pepper, chopped or cut into strips
1 green pepper, chopped or cut into strips
1/4 Ib (125 g) sliced ham or turkey roll, cut
into strips
2 tbsp chopped fresh parsley
2 green onions, chopped (optional)

Dressing:
3 tbsp vinegar
1 small clove garlic
1/2 tsp mustard
1/2 tsp salt or more to taste
1/2 cup vegetable or olive oil
Salt and pepper

Bring large pot of water to boil. Add 1 teaspoon salt. Add pasta; cook 7 minutes. Meanwhile, trim broccoli and cut florets into bite-sized pieces. Add to pasta; cook until pasta is tender and broccoli is tender-crisp — 2 to 4 more
minutes. Drain, rinse with cold water, drain well again and place in bowl.

To the pasta, add tomatoes, green and red peppers, ham or turkey, parsley and green onions. Toss gently.
For dressing, place vinegar in bowl. Put garlic through a press into vinegar; add mustard and salt. Whisk well. Whisk in oil; combine with salad. Add salt and pepper to taste, if necessary.

Makes 4 servings.
