2 3/4 cups all purpose or cake flour

3 tsp. baking powder

1 tsp. salt

1 cup shortening

2 cups granulated sugar

3 tsps. vanilla extract

1 3/4 cups milk


Preheat your oven to about 325 degrees to 350 degrees depending on the types of pans you are using.

In a small mixing bowl, mix the flour, baking powder and salt and set aside. In your mixer, put the shortening and the granulated sugar and mix for about 2 – 4 minutes until the mixture is light and fluffy while scraping down the bowl occasionally.  Add vanilla extract.

Next, add eggs one at a time until each egg is slightly incorporated while scraping down the bowl occasionally.

Next, add 1/3 of the flour and mix for about a minute then add 1/3 of the milk.  Scape down the bowl.  Add another 1/3 of the flour and 1/3 of the milk.  Scrape down the bowl and add the remaining 1/3 of the flour and 1/3 of the milk.  Don’t overmix the cake.

Preheat two cake pans and grease and flour them.  If you are using a baking spray, you do not need to flour the pans.  Divide the mixture between the two pans and bake for about 40 – 50 minutes.  Check for doneness by inserting a toothpick in the middle of the cakea or by using a cake tester.

When the cakes are finished baking, remove them from the oven and let them cool for about 10 minutes before removing the cakes from the pans.

NOTE:  You can use margarine to make the cakes if you prefer, but use a firm margarine if you are going to use it.
