Everyone loves cupcakes.  These cupcakes are so good, they are difficult to resist as they have a tangy flavor.


2 cups of cake flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

2 large eggs at room temperature

1 1/3 cups of sugar

1/2 cup unsalted melted butter

1 1/2 tsp pure vanilla extract

1 1/3 cups buttermilk

12 – 2 1/2 inch paper muffin cup liners


The first thing to do is to preheat the oven to 350 degrees. Then, line the muffin pans with the paper liners.

To make the cupcakes, sift the flour, the baking powder, the baking soda and the salt together in a good size bowl and set aside. Next, beat the eggs and sugar together in a large bowl until they are very fluffy.  Next, you will add the melted butter, vanilla extract and buttermilk.  Mix to incorporate the ingredients.  The next thing to do is to slowly pour the sifted dry ingredients into the batter.  Mix until all ingredients are combined and smooth.  Next, pour the batter evenly amongst the muffin cups.

Bake for about 18 minutes.  You can insert a tookpick into the centre of the muffin until it comes out clean.

Allow the cupcakes to cool on a rack for about 10 to 15 minutes before you frost them. Serving: 12

You can easily double this recipe if you want to make them for a party or a picnic and they are very cost effective and are great for a frugal budget.  You can dress them up with this cupcake frosting recipe.
