Summer food, rose colored fish steak in a wine marinade4 small skinless salmon steaks
olive oil
1 large lemon cut into 4 wedges
4 cups fresh baby spinach
1 small onion (cut thinly)
1/2 cup bacon crumbled
salt and black pepper
4 medium pieces of aluminum foil

Heat the grill to medium. On each piece of foil, place a piece of salmon. First, sprinkle each salmon piece with salt and pepper, then drizzle with lemon juice and then olive oil.

Next, arrange 1 cup of spinach around each piece of salmon, then arrange the onion on top of the spinach and sprinkle with the bacon bits. Next, drizzle olive oil over the spinach combination and then sprinkle with salt and pepper as desired.

Fold each packet until you have an “envelope” ensuring you have a tight seal so the “envelope” will not leak.

Place the packets on the grill away from direct heat. Rotate occasionally. These will take about 25 to 30 minutes to cook.

Remove packets from the grill and let them cool slightly before serving.

Use additional lemon wedges if you desire.
