Ingredients:

1 1/3 cups of all purpose flour (325 ml)

2 tsp. baking powder (10ml)

A pinch of salt

1 beaten egg

3/4 cup milk (175 ml)

1 1/2 cups fresh corn kernels (375 ml)

2 green onions, diced

Canola oil or any other oil for frying

Method:

In a large mixing bowl, put all of the dry ingredients and mix well.  In a small bowl, beat the egg until it is frothy.

Next, add the egg and the milk to the flour mixture.  Stir gently.  A few small lumps are alright.

Next, incorporate the corn and the onions in the the mixture and mix well.

 

In a large pot, heat about 4 inches of oil.  Next drop tablespoons of the batter into the hot oil but don’t overcrowd.

When the fritters are golden brown, turn them over and cook until the other side is golden brown.  Drain them on paper towels.

Makes about 24 fritters.
