Breakfast is not only the first meal of the day; it is also the most important meal. After we have been fasting all night while sleeping, we need food to get us going. Coffee does not count as breakfast. I am taking about food that will sustain you for a few hours. Below are some easy breakfast ideas that you can prepare at home especially if you are on a frugal budget and you don’t want to spend money on fast foods.

1. Casseroles are great for a healthy breakfast.  They can be made with ingredients that you like. If you are making a casserole, you will use fewer eggs than if you were preparing other egg recipes like scramble eggs. You can make a casserole that will last you or your family for the whole week or a few days. If you don’t have time to cook breakfast like bacon and eggs in the morning, you can prepare breakfast the night before.  What I usually do is prepare breakfast for the whole week and freeze it.  Then all I have to do in the morning is to steam it or microwave it.

2. Yogurt is another breakfast idea.  It is not only economical; it can be a very healthy choice if you choose regular yogurt, not the yogurt with the fruit on the bottom. You can add some fresh or dried fruit to the yogurt. The fruit will not only provide essential vitamins and minerals but it will also be a good carbohydrate source that will provide you with much needed energy to get you through until lunch.

3. Shakes are another good breakfast idea. Preparing a shake and taking it with you to consume while you drive or are driven to work will also provide the necessary nutrients that you body needs. In a blender, add some frozen fruit, protein powder, ice and juice or frozen fruit, yogurt, ice and juice to whip up a tasty breakfast which you can then put in travel mugs and everyone can grab a mug on their way out the door.

4. Pigs in a blanket. I am not talking about store bought sausage based foods.  You can make your own pigs in a blanket but you need to have some frozen sausages in your freezer. You can buy and keep a few packages in your freezer so you can make these when you are strapped for time. First, you will need to make pancakes and freeze them in stacks that will feed your family.  Remove the pancakes and the sausages from the freezer for thawing. Use the microwave to heat up as many sausages and pancakes as you need. Once the pancakes and sausages are heated, you will be wrapping each sausage with a pancake for a tasty breakfast. These can be eaten while you are on your way to work because of the sizes, which will not create a mess.

5. Breakfast sandwiches are another good breakfast idea.  What you need to have on hand to make your breakfast sandwiches are deli turkey, chicken, cheese, ham or whatever you like plus some vegetables like lettuce and tomatoes. You can make them and grill them the night before. Then, cut them into quarters and put them in a container and store in the fridge overnight. In the morning, you would heat them up, add your toppings and you will have a very quick breakfast.

The above ideas for breakfast will save you time and money. You can even use things that you have in your pantry to create delicious breakfasts.  I am sure will think up a few breakfast ideas after you read this. Now that you have some ideas to create healthy breakfast, you will not ship breakfast or go to the drive through to pick up breakfast.
